Rock Samphire is an edible wild plant, it's also known by the names Sea Fennel and Crithmum Maritimum. It has fleshy divided aromatic leaves that were described as having a "pleasant, hot and spicy taste".

Rock Samphire has nutritional value, being rich in Vitamin C, Vitamins E and K, iodine, carotenoids and flavonoids. It is also rich in antioxidant and Omega-3 fatty acids.

Rock Samphire is pickled with Apple cider vinegar, water and salt.
